Gingerbread Cut-Out Cookies

Tis the season for some gingerbread!  I'm always trying to get more healthy snacks and fun food for my kids to eat after school or in their lunches.  I make their treats because I can cut back on the sugar and limit bad-for-them fats.

Control, ladies, it's all about control.

Cookies and breads with lots of spices, like gingerbread cookies, are the perfect candidates for "healthy-ing up" the recipe.

brother they all ran away.  They sent him on a scavenger hunt to find them.

Gingerbread Cut-Out Cookies

1/2 cup applesauce, unsweetened
1/4 cup packed brown sugar
1/2 cup molasses
1 egg
3 cups whole wheat white flour
1 tsp baking soda
1 tsp ground ginger
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp ground cloves
2 Tb cold water

Preheat the oven to 350 degrees.

Mix all the ingredients together until blended.  Cover and refrigerate for 1 hour.

On a well-floured counter, roll out dough to about 1/4-in. thickness.  Cut out with cookie cutters of your choice.  Place on cookie sheets that have been sprayed with non-stick cooking spray.

Bake for 10-11 minutes or until the edges are firm.

Your yield depends on how big your cookie cutters are.  I used a gingerbread man that was 3.25 inches tall.

It made 3 dozen cookies at 57 calories per cookie.

Peanutty Tofu Dip

In order to keep the appetite at bay, I'm always looking for more snack ideas that are loaded with protein.

I was very curious to try this recipe out.

Then I did.

Then I was addicted.

Don't let the tofu scare you.  You can find it at your normal grocery store, just ask.

Peanutty Tofu Dip

1 cup silken (or soft) tofu
1/3 cup creamy peanut butter, all-natural
4 tsp honey
2 tsp lime juice

Blend all the ingredients in a food processor or blender until smooth.  Store in the refrigerator.

Use as a dip for fruit (apples!) or raw vegetables.  Spread it on  whole grain crackers or bread.  Ooo, yum!

Makes 1 1/2 cups.  80 calories for 2 tablespoons.

This was Christmas Party #3 of the season so far for me.  Only about 5 more to go.

As usual, the people and food were amazing at this party.  I did skip a few pastry shells and bacon, but irritated everyone behind me in line because I hogged the salad.  I didn't feel too bad, however, because there were leftovers of everything.

The cake was made by a friend who is the Cake Boss of San Antonio.  Whoa.  Triple-layered, orange/cranberry/cream cheese/white chocolate cake.  All those white spirals are white chocolate.  Amazing.  I had to taste it and I'm very glad I did.

Calories?  I went to the party with 480 calories to eat.  I'm pretty sure I went over based on the too-full feeling after the cake.  I could have done a few things differently, however, overall Christmas Party #3 was a success.

Cranberry Nut Bread

Ah!  So much to write, post, and giveaway this week!  The recipes have been shoved to the back of the line and there are some good ones!

Anything with the words "cranberry" and "nut" in it is going to mean a grand slam in my mouth.  This one was great.  I made it for the Thanksgiving road trip and it was a perfect treat for me and the rascals.

Cranberry Nut Bread

2 cups whole wheat white flour
1/2 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 baking soda
3/4 cup orange juice
2 Tb canola oil
1 Tb orange peel, grated
1 egg, beaten
1 1/2 cups fresh cranberries, coarsely chopped (yes, REAL cranberries)
1/2 cup nuts, chopped (I used walnuts)

Preheat oven to 350°F  degrees.

Spray a large (9x5 in.) loaf pan with nonstick cooking spray.

Put on a good CD and chop your cranberries and nuts.  This will take a while.

Mix all ingredients together, adding the cranberries and nuts in last.  Stir until just blended and spread evenly into loaf pan.  Bake for 55 minutes or until a toothpick comes out clean.

Cool on rack for 15 minutes.  Remove from pan and cool completely.

Made 12 slices.  187 calories per slice.

Delicioso Mexican Green Salad with Cilantro Lime Vinaigrette

Fit Mommas Rebecca and Christie and I were talking about their upcoming food challenge:  the upcoming Christmas party at church.  It always seems to be a land mine of calories and any sort of redeeming nutrient is drowning in sauces, cheeses, white flour and butter (I say that only in a loving way, of course :).  Their party also has an interesting twist since it will be Mexican themed.

Their question was:  What can I bring that I would actually eat?  Is healthy even possible?

I gave my immediate answer to everything, including world peace:  make a salad!

I always seem to turn to this blog first when trying to conjure up to eat.  Pam has got delicious, healthy food down to a science.  I made her salad a few weeks ago for a dinner party and thought it would be just the thing for Christie and Rebecca's Christmas party.

Delicioso Mexican Salad with Cilantro Lime Vinaigrette

1 head of romaine lettuce, torn into bite sized pieces
Handful of grape tomatoes
2 green onions, sliced
2 small baby bell peppers - red, yellow or orange, diced
1/2 cup black beans
1/2 cup sweet frozen corn, thawed
1 tbsp raw or toasted pumpkin seeds
1 avocado, diced
2 tbsp cotija cheese
1 handful of crushed baked tortilla chips
Cilantro Lime Vinaigrette (recipe below) to taste

In a large salad bowl add all the ingredients.

Cilantro Lime Vinaigrette:
1/2 cup of chopped cilantro
1/4 cup canola oil
1-2 tbsp fresh lime juice
1 tbsp apple cider vinegar OR red wine vinegar
Salt and pepper to taste
1 clove garlic, minced
1/2 tsp oregano

Mix all the ingredients in a food processor or blender for about 30 seconds.  Drizzle onto salad and mix well.

** I typically double this entire recipe to fill a large salad bowl.

Pumpkin Spice Cake

I have about 27 more pumpkin recipes I want to try out before Thanksgiving hits, but it looks like I will have to save a few -- OK most of them -- for next year.  I've got to get packing and on the road ASAP.

However, I did throw this together last night and we all have been enjoying it.

It is a dense, moist cake that has the perfect blend of spices and pumpkin.  I reduced the sugar, so it's not too sweet.  However, topped with a tablespoon of light Cool Whip, it is simply refreshing and festive.  I actually like to eat it cold.

Pumpkin Spice Cake

2 cups whole wheat white flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ginger
3/4 cups sugar
1/2 cup applesauce, unsweetened
1/2 cup water
1 small pkg. of instant, sugar-free vanilla pudding
1 cup pumpkin puree
2 eggs
2 egg whites

Set the oven for 375 degrees.

Mix all the ingredients in a large bowl for about 4 minutes until every thing is blended well.

Spray a bundt pan or 9x13 cake pan with nonstick cooking spray and pour in mix.

Bake for 45-50 minutes until done (the bundt pan takes longer).  Note:  This cake is so moist, a toothpick may never come out "clean" even after 50 minutes.  I finally just took it out and it was great.

Top with Light Cool Whip, sprinkle a little cinnamon and nutmeg over the top of it and enjoy!

Makes 16 slices.  127 calories per serving (with the Cool Whip).

Fit Momma Question: Healthy Entertaining?

This question from Fit Momma Lynette landed in my inbox:

My husband and I entertain a lot. Do you have any suggestions or tips on how to entertain and be a Fit Momma?

It swear for the past fifteen years of my life, I've heard the same phrase every Sunday from the Doc:

"So, who are we having over for dinner today?"

We drill the manners over here.

We love to entertain.  I love to cook, we both love the conversation, the kids love having friends over to go crazy with.  It's never silver spoon fine dining over here, more like paper and plastic, but having friends and family over just works for our family.

For the most part, people know what they are going get when they come here. I can hear the husband in the car on their way over now, "Is she going to serve us rice cakes and carrot sticks?"  I do stick to my guns when it comes to healthy food -- but make sure it is so delicious they can't pass it up. My menu usually looks like this:

Main dish
Steamed veggie
Monstrously huge salad
Tons of fruit
Whole wheat bread or rolls
Dessert

For instance, usually some main dish from the blog. Yep, I've served Lasagna packed with spinach, Chili packed with zucchini with a baked potato bar, Hawaiian Haystacks, Vegetable soups galore, etc. Any grain I use is 100% whole wheat and nobody has walked out the front door yet. If it goes well with the meal, I'll have some sides of steamed vegetables.

The best part for me is the salad. You know me, any excuse to go bonkers on salad and I will take it. I get out my biggest bowl and make some killer creation that cannot be passed up. This is pretty much my signature, so I do it every time. I tailor it to go along with the main dish - and make plenty so Jared and I can eat to our heart's content :)  A few favorites are my Pear Walnut Salad,  Chicken Craisin Salad, Asian Chicken Slaw, and Southwestern Rice and Pinto Bean Salad.

I will always have some big bowl or platter of fruit. And, of course, some of my whole wheat bread or rolls.

As for dessert, that is typically something I will ask them to bring. I try to coordinate my cheat meal with having people over so I can enjoy their dessert fully and not think twice about it.

As I'm sure it is for you, all this eating healthy jazz is who we are and not just something we are doing.  We don't shelf all the nutrients when we have guests over. That's when we can go hard core and really enjoy healthy, delicious food with people we admire and love.

And I've never had anyone go running out the door for KFC yet (at least not that I know of :).

Salmon Soft Tacos

Trainer Momma Trivia:  I HATE SEAFOOD.

I grew up in the desert, people.  No fish were anywhere.  The only fish I remember eating as a kid were very smelly, breaded fish sticks.  Bleeck.

This aversion runs a bit - OK, a lot -  contrary to healthy living, being that I should be eating fish about twice a week.  The Doc LOVES all the healthy fish, my kids eat it just fine -- it's me who is eating it in a corner with my eyes closed and nose plugged (I am not kidding here.  That's really how I eat fish).

I have made much more of an effort in the past two years, I am proud to say.  However, I still can do A LOT better.

We are eating more than chicken over here, I swear.  I just haven't mastered many fish recipes that I love, since obviously I just don't love the fish part.  This recipe, however, with an entire cup of the Black Bean Salsa, I was able to come close to enjoying.

My family downed it and I kept it down.  That's saying a lot :)

Salmon Soft Tacos

adapted from EatingWell

2 Tb extra-virgin olive oil
1 Tb chile powder
1 Tb fresh lime juice
1/4 tsp kosher salt
1/8 tsp freshly ground pepper
4 4-ounce wild salmon fillets, about 1-inch thick,
8 corn tortillas

Preheat oven to 350 degrees.

Mix oil, chile powder, lime juice, salt and pepper in a small bowl.  Rub it liberally all over the salmon.  Bake in oven uncovered for 15-20 minutes until salmon is flaky**.

Remove from oven and slice each fillet in half horizontally.  Serve on a corn tortillas with 1/2 cup of Black Bean Salsa.


Makes 8 tacos.  158 calories per taco (no salsa).  231 calories with salsa.

**This would be delicious grilled.  My BBQ is dead, so I have to bake everything for a while.

Traditional Meatloaf

OK, I will admit I am not a big meatloaf fan.  However, my father loves this comfort food, and the Doc inhales it, so it does get made once a month or so.  I love see the look on their faces when I tell them its a meatloaf night :)

Traditional Meatloaf

Meatloaf:
1 lb ground beef, very lean
2 slices of whole wheat bread, diced up very small
2 eggs
3/4 cup skim milk
2-4 Tb sprinkle dried onions
2-3 Tb sprinkle parsley
1/4 tsp sage
1 tsp salt
1/8 tsp pepper
3/4 - 1 cup grated vegetable (sweet potato, butternut squash, zucchini, yellow squash, or finely cut spinach are all my favs)


Topping:
1/4 c ketsup, reduced sodium and no HFCS
2 Tb brown sugar
1 tsp dried mustard (yellow mustard can substitute)


Preheat oven to 350 degrees.

In a large bowl mix the above ingredients with your hands.  Put in a loaf pan and cook for 50 minutes.

While you are waiting mix up topping in a small bowl.  Remove from oven and pour off grease.  Spread topping over top of the meatloaf.

Cook for 10 more minutes.

Makes 8 large slices.  178 calories per slice.

Eat With Me: On a Saturday!

I have received several inquiries about how I eat on the weekends.  I eat a cheat meal every week, typically on Sundays.  I've also mentioned I eat pretty lean during the week and a bit more lax on the weekends, which ends up how I maintain my weight.

This past Saturday I thought would be an interesting day to track what I ate since I wouldn't be home most of the day.  We had our last day of soccer season which ended up equating to spending 4 hours at the soccer fields and 3 hours at end of the season soccer parties.

On days like this, I become the cooler queen.  I simply plan ahead and pack food for me and my kids.  Easy.  When I'm outside all those hours, the food tastes especially good.

Tuna Avocado Wrap

When I'm on the go, wraps are the way I go.  This Tuna Avocado Wrap is a staple of mine.  Just throw it in a cooler and this baby really fills me up.

Tuna Avocado Wrap

1 large whole wheat tortilla or Flatout Bread
1/2 cup albacore tuna
2 tsp Miracle Whip, light
1 Tb hummus, red roasted
1/4 cup spinach
2 slices avocado
red onion slices
matchstick or grated carrots
1 Tb feta cheese, reduced fat

Mix the tuna, Miracle Whip and chia seeds in a small bowl.  

On the tortilla, spread the hummus then cover with the spinach.  Place the tuna mixture over the spinach and top with avocado, onion, carrots, and sprinkle with the feta cheese.

Wrap that baby up and enjoy!

Keeping It Together During the Holidays

We’ve done it a million times:

November hits and days get colder, shorter and more rushed. The workouts start getting lost in the shuffle along with the healthy snacks.   By December, you're eating dinner from a goodie plate your neighbor gave you and the weights are a distant memory.

Just in case you're on the fence, let's take a look at the case for letting it all go and blowing it or keeping it together over the holidays.

The case for letting it all go:

The Food
Oh man, where do I begin? The homemade rolls, stuffing, butter, bacon, and pie tables for starters.  Then, without coming up for air, we are faced with hand dipped chocolates, plates of green wreaths made from corn flakes and marshmallows, gingerbread houses, shortbread cookies, huge tins of carmel popcorn, and the greatest Christmas tree sugar cookies on the planet.

The Stress
Stress is sky high during the next 7-8 weeks. Some of us have some serious traveling ahead. The gift list is longer than last year and of course money is tighter than last year. Deadlines at work are looming.  Then of course, the cherry on top is full of a few long lasting viruses and rolled in bacteria.  Lovely.

Time
There is simply too much to fit in such a short amount of time. The church parties, work parties, school parties, gifts for neighbors and friends, music programs to see, a matinee of the Nutcracker, a few sports tournaments for the teenager, caroling, shopping, and wrapping.  And whom has to get all this done?  Take one look in the mirror. You’re lookin’ at her, sister.

Whew! It sounds like we should all just pack up the the Asiscs and head to the nearest Dunkin' Donuts. I mean, let's be realistic, right?

Just hear me out...

My simple case for “keeping it together”:

We will be able to handle all of the above mentioned -- the food, the stress, the time constraints -- a million times better.

A daily dose of exercise will help us keep our heads above water and give us that boost of energy we desperately need for the  next few months.

Eating well will help cut down on cravings and help us make better food choices.

We sleep better because our body has worked hard.  Plus, the stomach isn’t doing back flips like it would if we would have eaten 6 of those cinnamon rolls like last year.

And for some weird reason I cannot explain, when I take the time to eat right and keep my workouts up -- I seem to have more time. It somehow manufactures time.  How does that happen?  Odd, I know. I tend to think I’m more productive and hit the ground running thanks to sticking with the healthy habits.

Remember:  
This is who we are and not just something we are doing.  
That equates to all 12 months out of the year.

My #1 argument for trying and “keeping it together” over the holidays:

If you can do this during the holidays, you can do this ANYTIME.

So, gals.  Let's buckle down and stick with the schedule.  It will pay off BIG TIME come January 1st, I promise :)

Not an Oxymoron: White Wheat Flour

As you know, I am a huge whole wheat flour fan. My kitchen can regularly be found with a light blanket of whole wheat flour covering pretty much every surface since I bake with whole wheat flour weekly. In my recipes, I typically list it as whole wheat flour, but I have to come clean and get something off my chest:

 it is actually white whole wheat flour.

Now, would I do that?
Of course not!

First of all, white whole wheat flour is not all-purpose flour thrown into whole wheat flour. It is a flour that is milled from hard white spring wheat. Traditional whole wheat flour is milled from a red wheat.

So, the question is this:

Is there a difference between regular-plain-jane whole wheat flour and white whole wheat flour?

No and yes.

Similarities:


Both have fantastic nutritional benefits and are power lifters in the food world.  One cup of white whole wheat flour and whole wheat flour are virtually identical nutritionally speaking.

If you are concerned about nutrition, it’s a wash either choice you make.

Differences:

Color
White whole wheat is lighter is color, just a very pale brown.  Just think, this makes tricking people into eating whole wheat easier than ever!  Years ago the Doc asked me to make chocolate chip cookies for his department, and I used white whole wheat flour.  All those guys inhaled them, and they were never the wiser.  Bwah-ha-ha-ha!  Just think what you could pull over on your kids!

Taste
The taste is just a bit more mild than regular whole wheat flour.  I've talked to several people and they say they just hate the taste of whole wheat flour.  They are typically are referring to regular whole wheat flour.  I always suggest this as an alternative for them.

Texture
The texture of white whole wheat flour is typically a bit more fine.  Although I am a texture eater BIG TIME, many people aren't.  Again, this resembles white flour's texture, thus making it easier to go down for some.

How to use white whole wheat flour:
I substitute it cup for cup for all-purpose flour and for regular whole wheat flour. Even-stevens. Baked goods such as cookies, cakes, bars, breads, pancakes, pizza, etc. turn out fantastic with white whole wheat flour.

Where do you get it?
White whole wheat flour is found in your grocery store in the flour section. Just do a little detective work, and I bet you’ll find it.

If not, you can find it in the Trainer Momma store that is open 24/7.

Now, if you have a grinder (which I highly recommend), then I suggest finding a supplier that will order you large bags of the stuff. I get two 50 lb. bags about twice a year and it works like a charm for me. I have freshly ground flour at my finger tips and I’m not breaking the bank.

Now, should you go dump all your regular whole wheat flour ground from red wheat? OF COURSE NOT! That is good stuff! I have a SIL who uses that exclusively in all her baked items and her family is totally fine with it.

White whole wheat flour is simply another option for you out there who are trying to con help your family switch over to the healthy stuff.
