Blackberry Spice Muffins



Blackberry Spice Muffins
adapted from Cooking Light

1 3/4 cup whole wheat flour
1/4 cup ground flax seed
1 cup rolled oats
1 cup brown sugar
1 1/2 tsp baking powder
1/2 tsp baking powder
1/2 tsp sea salt
1/2 tsp apple-pie spice
1 cup skim milk
3 Tb no sugar added applesauce
1 tsp vanilla extract
1 large egg, slightly beaten
1 1/2 cups frozen blackberries, coarsely chopped

Preheat oven to 400 degrees.

Mix it all together except for the blackberries. After it is well blended, gently fold in blackberries.

Spoon into sprayed muffin tins. Bake for 16 minutes for regular sized muffins, 12 minutes for mini muffins. Muffins are done with they spring back when touched in the center. Cool in pans for 10 minutes before moving onto wire racks.

Makes 17 regular sized muffins - 177 calories
