Mountain O' Stir Fry

3-4 chicken breasts, diced
ton of chopped vegetables: broccoli, carrots, water chestnuts, snap peas, red peppers, green peppers, whatever else floats your boat
edamame, shelled
brown rice
1 Tb olive oil
low-sodium seasoning salt
sprinkle with low sodium teriyaki sauce
Put the olive oil in a very large skillet and heat it up to medium-high. Add in diced chicken and sprinkle with seasoning blend. Cook until done, about 6 minutes.
Remove chicken and set aside. Add veggies into same skillet. Season with seasoning blend. I like to add a little water, then put a lid on it and steam the veggies. Let them cook until slightly tender, but not too soft (yuck!) around 8-10 minutes.
Layer 1 1/2 - 2 cups of veggies, then 1/2 cup of brown rice, then 4 oz of chicken for a serving. Sprinkle with teriyaki sauce.
Enjoy!

**Trainer Momma Tip: Usually with stir fry people load up their plates with tons of rice and chicken, then top with a little veggies. Flip that: the vegetables are your base, then top with a little rice and chicken. That way you'll get 3-4 servings of veggies in one meal!
