Banana Muffins

I am still over at petit elephant today and tomorrow. Thanks for swinging by... Oooh, this is a good one:

More healthy snacks for the kiddos. Bananas. Fiber. These surprisingly sweet muffins please every time. There aren't many ingredients which = fast.

Banana Muffins
Recipe from Set for Life

1 cup whole wheat flour
¼ teaspoon salt
1 cup bran cereal (All-Bran, Fiber One, etc.)
1 tablespoon baking powder
2 tablespoons sugar or honey
1 egg
2 tablespoons oil
1/3 cup skim milk
2 large or 3 medium bananas
Preheat oven to 400 degrees.

Mix all ingredients until combined. Spray muffin tins with nonstick spray. Fill muffins 2/3 cup full. Cook 12-14 minutes for regular sized muffins or 9 minutes for mini-muffins.

Yield: 16 regular muffins or 30 mini muffins.

well...i think I might have failed on this one. The kids love them, but the hubby and I think they were too salty. hmmm, maybe i'll cut the salt.
