White Chicken Chili

I got this winner recipe from a good friend Missy. She lived near me for just one, measly year. Not nearly long enough for me. OK, let me tell you about this amazing woman. She had four kiddos all in a row, and a direct descendant of Pheidippides . She is an amazing runner and has qualified for the Boston Marathon several times.

I am not making this up: This Fit Momma had a TRIPLE stroller, would push three of her kiddos in it, have her oldest riding a bike beside her as she went for a run for several miles. In the summer. I'm not making this up. She became a legend in her neighborhood. And I was her friend!

I'm telling you, she had THE GREATEST LEGS ON THE PLANET. I swear, every time I was with her all I could do was stare at her strong, tan, sinewy, muscley, runner legs. If I had legs like Missy, I would get nothing done. All I would do would be stand in the mirror and stare at my gorgeous legs.

More than being an amazing athlete -- she was the most dedicated mother. Completely head over heels in love her with kiddos, she had more pictures up in her house of her children than I'd ever seen. Gentle, loving, patient mother. That is Missy. I miss her. And Max (her only boy).

Onto the recipe! Missy served this to us girls at a luncheon she put on for us. I was blown away and had to have the recipe. I've modified it slightly, but it is definitely thanks to Missy that I'm sharing this:





White Chicken Chili
adapted from Missy

3 boneless skinless chicken breasts
16 oz of your favorite salsa
1/2 cup chopped onion
1 Tb ground cumin
3 cans of Great Northern beans
4 c chicken broth
Monterey jack shredded cheese

Boil thawed chicken in water for about 10 minutes until cooked. Let chicken cool, shred, then set aside.

In a blender or food processor, combine salsa and onion. Blend until there are NO CHUNKS.

**I only do this for the kids and the Doc. In our family, chunks = gross. So, I blend them and whala! Now it is magically edible.

Add chicken broth, blended salsa, beans, cumin, and chicken in a stock pot. Simmer soup for 30 minutes. Garnish with 1 Tb of Monterey jack cheese.

150 calories per cup of soup

This chili looks amazing. We are expecting ice and snow (a rare thing here) tomorrow, and I may have to make it for the occasion! I wanted to say thanks too for the book advice. I am off tho the library to pick up some ABS books this afternoon.

Oh wow!! thanks so much for your blog!! You are so motivating and positive all the time... I love it! We all have the winter blues in Ohio as I have been (trying) to train for Boston again this year- but it has been so unbelievable cold that my water bottles turn into icecubes as I am running outside.... but now I feel motivatied again and really miss you and all of the wonderful positive people in Texas... enjoy your last year there and hope everyone enjoys the chili- I actually have that on my menu for this week too. xoxox

She does sound amazing! We had a girl like that in our neighborhood. She'd push her double (not triple) stroller around through snow, rain, sunshine. I'd see her miles from my house sometimes, trecking her kids along. I didn't know her personally, but we used to call her "crazy runner lady". Really though I was a bit jealous of her ambition.
